Welcome!  Thank you for visiting.  I am author, Virginia Brown Wright, writing from the hills high above the valley, in the state of Ohio.  A good amount of my time is spent cooking and testing recipes, photographing foods, researching, interviewing, and writing about health matters.  For years I've adapted recipes to lower fat,  lower cholesterol and most recently lower carb, for an overall  healthier way of cooking.  My present eBook is chock full of heart healthy, delicious, quick and easy, low fat, low cholesterol and low carb recipes. Recipes that include everything from Beef Enchilada's to Chocolate Mud Cake.  This eBook is a compilation of everyone’s “family favorites", with recipes that have been passed down from my family members, friends and from viewers of  LOWFAT WEEKLY. 

Some years ago while living in Mississippi, I was a Preschool teacher for a private preschool and kindergarten.  Part of my teaching requirement was to take continued education units (CEUs) i.e., classes, which gave me credit hours that I needed to remain teaching.  I completed coursework in "Family Nutrition" and was awarded a certificate for completion of the course.  While being a teacher, I spent hours thinking of fun ways to teach children, and  I started designing "Children's Activity Pages" to send  home on weekends and school vacations with my students. Just as it is important to nourish the body with food, it is important to keep children's minds nourished and educationally active while they are away from the classroom.
